Supper/lunch rice and chicken curry

Ingredients:
CHICKEN
•onion sliced
•rajah
•green pepper
•cooking oil
•knorrokx stock cubes
•salt
•know soup(mutton)

CARROTS
•cooking oil
•salt

SPINACH
•onion
•rajah
•know soup

METHOD
CHICKEN
•in a pot put cooking oil,onion fry until golden brown
•add rajah
•let it simmer for a minute add green pepper and knorrokx stock cubes
•add your chicken cook for 20 minutes and add know soup once chicken is finely cooked.Set aside

CARROTS
•in a baking tray add your finely chopped carrots,cooking oil and a pinch of salt
•grill for 10-15 at 180 degrees Celsius and  set aside

SPINACH
•finely chop your spinach
•thoroughly rinse and set aside
•in a pot add cooking oil once oil turns hot add onion
•add rajah once onion is golden brown
•add your spinach fry until soft and your soup and let it simmer for a minute then set aside

Dish up and enjoy!!❤

Lockdown soft sconces

Soft Scones

Ingredients:
•4cups of flour
•2cups of maas
•1/2 cup of melted margarine
•3 large eggs
•1cup of sugar
•1 tablespoon of vanilla/caramel essence
•1 tablespoon of salt
•1/2 cup of baking powder

Method
•In a bowl,put your melted butter and your eggs
•Add sugar,vanilla essence and maas
•whisk until the sugar has desolved
•once that is done mix all your dry ingredients,flour;salt;baking powder to the wet ingredients

Tip:Do not over mix

•dust your surface with flour using a crookie cutter(I used a glass)
•on your baking tray put a little margarine and place your scones
•brush with egg wash

•bake for 10-15 minutes at 180 degrees
Celsius
•once done remove from oven and let them cool...enjoy❤😊

chilled lunch/dinner

Rice, chicken curry and salads

 
Recipe
CHICKEN
Ingredients:
•Half onion finely chopped
•1/2 teaspoon of mild and spicy rajah
•1 teaspoon paprika 
•1 chicken stock pot

Method
Brown chicken and set aside,in the same pot add onion until golden brown 
•Add rajah spice
•Return chicken and stock pot
•Add warm water till chicken is cooked 

BEAN SALAD
Ingredients:
•carrot strips 
•green beans boiled(water drained)
•butter beans in tomato sauce 
•sweet chilli sauce 

Method
•in a pan fry onion and carrot till soft
•add spice and allow to cook for a minute 
•add beans,sweet chilli 
Make sure all is evenly done

Coleslaw
Ingredients:
•shredded red and white cabbage
•grated carrot 
•mayonnaise 

Method 
•mix all ingredients in a bowl add mayonnaise and put in fridge 
•serve while cold

Beetroot 
•boil overnight
•into a bowl,cut in cubes add tomato sauce and mrs.balls chutney 
•put in freezer and serve while cold

PANCAKES

15 ml cooking oil
15 ml icing sugar
5 cups of all purpose flour
5 ml of baking powder
2 ml of salt
4 cups of milk
5 ml of baking powder
80g brown sugar


METHOD

  1. Mix sugar, cooking 
  2. Add flour,baking powder,salt
  3. Add the wet mixture
  4. Mix together with milk
  5. Leave for a few minutes
  6. Fry pancake 2-3 minutes on each side
Serve while warm, serve with fruits i added mine with icing sugar..ENJOY!!!
